*Make sure to follow directions carefully and use good quality cocoa.
1 ¾ C all-purpose flour
¾ t baking soda
½ t salt
1 C cocoa powder
¾ C butter, softened
2 C sugar
2 eggs (room temp)
1 1/3 C very hot water
1 T pure vanilla
Preheat to 375 (High Altitude) - (350 for lower Altitude)
Beat butter with sugar until light in color (5-7 min) Scraping sides periodically.
Whisk together flour, cocoa, baking soda, and salt. Set aside.
Add eggs to the butter and sugar mixture and beat for 3-5 minutes
Add vanilla to the hot water in separate cup
Now add the dry ingredients alternating with the vanilla/water beginning and ending with the dry mixture. Mix until smooth, scrap sides periodically
Divide into pans evenly and bake for 20-25 min until a toothpick s clean when poked
Let baked cakes sit in pans for 5-10 min before turning out.
